Peach Upside-Down Cake

This moist golden fruity cake is Peach Cakevery easy to prepare and makes a perfect sweet bite to go with your morning coffee or afternoon tea!

Add some blueberries for extra vitamins, potassium and color and hemp and flax seed for protein, omega 3 and 6, antioxidants, amino acids, fiber, iron and zinc!

Top Ingredients:

  • 4 cups of sliced unpeeled organic peaches (4 to 8, depending on the size)
  • 1/2 cup of blueberries (optional)
  • Lemon zest to taste
  • 1 tablespoon of brown sugar
  • 1/4 cup of brown sugar
  • 2 tablespoons of water
  • 1 teaspoon of vanilla extract

Dough Ingredients:

  • 1 ½ cups of flour
  • 2 tablespoons of baking powder
  • 1/3 cup of brown sugar
  • A pinch of salt
  • 1 tablespoon of hemp seed
  • 1 tablespoon of flax seed
  • 1 ¼ cup of non-dairy milk (almond, rice, coconut or soy)
  • 2 tablespoons of coconut oil
  • 1 teaspoon of vanilla extract
  • Lemon zest to taste


  1. Slice your peaches and place them in a bowl. Add the blueberries, lemon zest, and the tablespoon of brown sugar. Mix well and set aside.
  2. Preheat oven to 350 degrees Fahrenheit.
  3. Place an oiled 10-inch cast iron skillet on medium heat. Once your skillet is hot, add the 1/4 cup of sugar and 2 tbsp of water and cook for a few minutes until you obtain a slightly thick golden caramel. Then mix in the vanilla extract, cook for another minute or two and remove from heat. Finally, place the peaches mix in the skillet and let it sit until you pie dough is ready.
  4. In a medium bowl, mix all the dough dry ingredients. Then add the milk, vanilla extract, lemon zest, and coconut oil. With a wooden spoon, incorporate all the ingredients till you obtain a moist creamy dough.
  5. With your wooden spoon, place all the dough on top of the peaches; spread it evenly.
  6. Bake for 35-45 minutes or until the cake is fully cooked (stick a toothpick in the center of the cake, if it comes out dry, your cake is ready!). Then remove from oven and let cool. Finally, run a knife around the edges to loosen the cake from the sides of the skillet and carefully invert the cake onto a large serving plate. Serve at room temperature or chilled. Enjoy!
