Portobello mushrooms are high in vitamins and minerals and are great for meatless barbecues or light and quick gourmet lunches. These Portobello sandwiches are delicious and flavorful and can be prepared in just five minutes. Choose your favorite bread and some fresh vegetables and get ready for a juicy and meaty mushroom sandwich!
- Portobello mushroom caps (washed)
- Salt, pepper and olive oil
- Lactose free mozzarella cheese slices
- Veganaise or Hearth Balance egg-free mayonnaise
- Vegetables of your choice: lettuce, tomato, onion, etcetera
- For caprese style: diced garlic, sliced tomato and fresh chopped basil.
You can grill or pan fry your Portobello mushroom, either way it only takes about 5 minutes to be ready.
Season your mushroom caps with salt, pepper and olive oil or marinate them ahead of time with your favorite spice mix.
Place the mushrooms caps on the hot grill and cook each side for a few minutes. Before removing from the grill. add a slice of cheese and allow it to melt for a minute or two.
In a medium pan on medium heat, sauté some freshly diced garlic. Then add the Portobello mushroom cap. Cover with lid and cook each side for 2 minutes.
Turn off the heat, season, and add your lactose free mozzarella slice. Cover for another minute and allow the cheese to melt to perfection.
Place the Portobello patty on your favorite bread or bun, add condiments and vegetables of your choice and chow down!
Recommended sides: potatoes (any style), grilled corn, fresh fruit or green salad.
