Japanese Summer Noodles

Simple yet delicious. These Japanese chilled wheat noodle dish is rich in fiber and makes a light but filling summer lunch. The recipe takes only five minutes to prepare and is full of flavorful delicious ingredients, such as ginger, lemon, green onions, seaweed, and sesame oil. Serve with sriracha sauce and soy sauce and accompany with a refreshing iced green tea!

About seaweed : A member of the algae family, usually brown or green in color, sold raw or toasted, and highly consumed by people in Japan. Seaweed is a nutrient rich nori flakesvegetable that comes from the sea and is packed with protein, fiber, vitamins including A, B–and B12, C, D, E, and K, and several minerals, such as calcium, magnesium, potassium, copper, and iron.

Bottom line, this edible algae, commonly sold as nori or kelp, is a superfood! Eat more seaweed!

Ingredients for two portions:

  • 2 bundles of organic soba Japanese wheat noodles
  • Freshly grated ginger
  • Freshly grated lemon zest (having a whole lemon in the freezer is an easy way to add freshly grated lemon to smoothies, salads and baked goods)
  • Cut nori dried seaweed (use scissors)
  • Thinly sliced green onion
  • Sesame oil
  • Sesame seed
  • Sriracha
  • Soy sauce


  1. In a medium pot on high heat, bring water to a boil. Cook organic wheat noodles as instructed on the package. Drain noodles and rinse well with cold water.
  2. Serve Japanese noodles in a bowl and dress with a squirt of sesame oil. Garnish with ginger, lemon, nori, green onion, sesame seed, and sriracha. Don’t forget the soy sauce and the chopsticks!

Hot version of these delicious Japanese noodles:

Ingredients for two portions:

  • 2 bundles of organic soba Japanese wheat noodles
  • 1/4 cup of nori flakes
  • 1/4 cup of air dried wood ear mushrooms
  • Sesame oil
  • 2 sheets of toasted sushi nori (cut into strips with scissors)
  • Toasted sesame seeds
  • Soy sauce to taste
  • Optional: top with thinly sliced green onion and fresh ginger


  1. In a medium pot on high heat. Add nori flakes and dried mushrooms and bring water to a boil.
  2. Once the water starts boiling, add organic wheat noodles and cook for 7 minutes. Drain, divide into two bowls, dress with sesame oil, and mix well.
  3. Garnish Japanese noodles with the strips of toasted nori and toasted sesame seeds. Serve with soy sauce and chop sticks. You can also top your dish with green onions and serve with Sriracha hot sauce. Enjoy!
