If you are craving a filling and flavorful tuna salad sandwich, this delicious and fresh vegan version of it will definitely hit the spot!
The main ingredient in this recipe is garbanzo beans, a healthy source of carbohydrates, fiber and protein. Garbanzo beans are a member of the legume family and they are one of man’s earliest cultivated vegetables.
- One can of organic garbanzo beans (drained and mashed or blended)
- The juice from 1/2 of a lemon, salt and pepper
- Olive oil
- Vegan mayo
- Olives (chopped)
- Red onion (chopped)
- Lettuce and tomato
- Bread of your choice
- Optional: vegan provolone style slices (Follow Your Heart cheese alternative has great flavor and consistency)
With a food processor or a potato masher, grind up the beans until you obtain a chunky garbanzo paste.
Add the chopped olives and red onion (to taste), salt, pepper and vegan mayo and mix well.
Spread a couple of tablespoons of your vegan “tuna” salad on your bread. Add thinly sliced tomato and lettuce (dress lightly with salt, pepper and olive oil) and serve cold!
